Assignment

Last week I finished the assignment for 8 (60×90 cm) posters for a new restaurant here in the village. And  the guests are raving about it I understood this weekend. The new restaurant (Springfontein Eats) is the first Michelin Star rated restaurant in South Africa. The kitchen (with permanently 3 chefs) is larger than the restaurant itself!!! And it needs to be because it’s not a quickie home cooking but the different ingredients (some foraged by THE Chef himself in the surrounding nature) undergo a long process of pre-preparation and (slow) cooking, etc.

Delicatesse d’Hollandaise …

…. de La Chef de la Maison.

The Dutch call it ‘pepernoten’ (pepper nuts) although no pepper is mentioned in the recipe. Every ‘chef’ has his/her own recipe; the ingredients are the same but the proportions differ.

The basic recipe is is a mix of flour, butter, nutmeg and grained cloves. The half round shapes (some makes them round) in the picture are topped with almond snippers but ‘La Chef’ had a shortage of two thanks to her assistant 🙂
